Ingredients:
- 200g firm tofu, diced
- 2 bundles udon noodles
- 2 cups mixed greens spinach, kale, bok choy, etc
- 2 cloves garlic, minced
- 1 red chili, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 tablespoon rice vinegar
- 1 teaspoon maple syrup
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions:
Cook udon noodles according to package instructions
Drain and set aside
In a small bowl, mix soy sauce, sriracha sauce, sesame oil, rice vinegar, and maple syrup to make the sauce
Heat vegetable oil in a large skillet over medium heat
Add diced tofu and cook until golden brown on all sides, about 5-7 minutes
Add minced garlic and sliced chili to the skillet with the tofu
Saut for another 1-2 minutes until fragrant
Add the mixed greens to the skillet and cook until wilted, about 2-3 minutes
Pour the sauce over the tofu and greens mixture
Stir well to combine and coat everything evenly
Cook for an additional 2-3 minutes
Add the cooked udon noodles to the skillet
Toss everything together until the noodles are heated through and well coated with the sauce, about 2 minutes
Season with salt and pepper to taste
Serve the spicy tofu and greens udon hot, garnished with sesame seeds
